These are two of my favorite summer salads that are easy and delicious.
Strawberry Spinach Salad
Wisk together or combine in a salad dressing shaker bottle:
1/2 c. vegetable oil
1/4 c. vinegar
1/4 c. sugar
1 T. poppy seeds
1/4 t. paprika
1/4 t. salt
Pour dressing over 6 oz. baby spinach leaves and 4 cups sliced strawberries, tossing until well combined.
Marinated Cucumbers
6 medium cucumbers, sliced
1 medium onion, sliced
1 c. vinegar
1/4 to 1/3 c. sugar
1/4 c. olive oil
1 t. salt
1 t. dried oregano
1/2 t. garlic powder
1/2 t. dried marjoram
1/2 t. lemon-pepper seasoning
1/2 t. ground mustard
Combine the cucumbers and onions in a large bowl.
Combine all other ingredients in a jar with a tight fitting lid. Cover a shake well. Pour over the cucumbers and onions and toss well. Cover and refrigerate for at least 4 hours. Servewith a slotted spoon.
